Avocado Tuna Salad Wraps

Avocado Tuna Salad
 The fist step is to make the Avocado Tuna Salad. Add one can of drained tuna to the bowl, then chop half an avocado and add to the bowl along with the green onion, olive oil, parsley, pepper, and mayo.


 Start assembling the wrap on rice paper. The rice paper must be soaked for about one minute until it is soft and pliable. I added chopped spinach, but anything could be added to 
the wrap at this step such as tomato or peppers.


 Add the tuna salad mixture on top of the spinach and fold the rice paper over. Next fold in the ends, then complete then finish folding the wrap tightly.

Dip in Sweet Thai Chili sauce if desired.



AVOCADO TUNA SALAD

1 can Tuna, drained
1/2 an Avocado, chopped
1 Green Onion, chopped
1/4 Cup Parsley, chopped
1/4 Cup Cucumber, chopped
1 Tbsp Olive Oil
1 Tsp Lemon Juice
1 Tbsp Miracle Whip
Salt & Pepper

Soak rice paper in a thin layer of warm water for approximately 1 minute or until it is soft and pliable. Remove from water, place on a tea towel, and press dry.
* To make this as healthy as possible, the miracle whip can be removed from the recipe and substituted for plain 0% Greek yogurt or Dijon mustard - or just removed completely.
